Kid-Pleasing Chicken Bites

With Christmas just around the corner, you may already have all your dishes planned. But sometimes, we forget to consider a bit of finger food to keep stomachs quiet, especially for the children. Whatever you want to call them, chicken tenders, strips, or bites are always kid-pleasing.

If you happen to already have your appetizers and snacks planned, then these two dishes will also work well for tail gate parties as you’re watching the latest football game!

Both of these recipes are adapted from Beth at budgetbytes.com. We adjusted the recipes to accommodate our Old Neighborhood Shaved Chicken Breast.  They helped cut down a bit on prep time and portion control!

Honey Mustard & Sriracha Shaved Chicken Bites

Honey Mustard Shaved Chicken Bites

Ingredients:

th 1 package of Old Neighborhood Shaved Chicken Breast
th 1 cup mayonnaise
th 1/3 cup honey
th ¼ cup mustard
th ¼ tsp paprika
th Salt and black pepper, to taste
th 2 cups panko bread crumbs

Directions:

1. In a bowl, combine the mayonnaise, mustard, honey, garlic powder, and paprika. Stir to combine. Add salt and pepper to taste.
2. Divide the sauce into two portions. Refrigerate one half. The other half will be the marinade for the chicken.
3. Place all of the shaved chicken breast into a resealable bag. Pour in the marinade sauce and mix well. Let it sit in the fridge for at least an hour.
4. Preheat the oven to 400 degrees.
5. Line a baking sheet with foil and place a cooling rack on top.
6. Coat the wire rack with non-stick spray.
7. Pour the panko crumbs into a bowl.
8. Remove the bag of marinated chicken from the fridge.
9. Taking a bit at a time, roughly a tablespoon, coat the chicken with panko.
10. Place each chicken piece on the wire rack as you coat them.

11. Discard any leftover marinade.
12. Bake the chicken in the oven until the panko has turned golden brown, roughly 20 minutes.
13. Serve with the reserved honey mustard sauce.

 

Sriracha Shaved Chicken Bites

Ingredients:

Sriracha-21 package of Old Neighborhood Shaved Chicken Breast
Sriracha-2 1/3 cup sriracha hot sauce
Sriracha-2 1 tbsp. rice vinegar
Sriracha-2 1/8 tsp. ground ginger
Sriracha-2 1/8 tsp. garlic powder
Sriracha-2 1 egg
Sriracha-2 1 tbsp. water
Sriracha-2 1 cup all-purpose flour
Sriracha-2 2 cups panko bread crumps
Sriracha-2 salt and pepper to taste

Directions:

1. In a bowl, combine the sriracha, rice vinegar, garlic powder, and ground ginger. Mix well.
2. In a resealable bag or container, combine the shaved chicken breast with the recently mixed sriracha sauce. Refrigerate the marinating chicken for at least one hour.
3. Preheat the oven to 400 degrees.
4. Line a baking sheet with foil and place a cooling rack on top.
5. Coat the wire rack with non-stick spray.
6. Set up a dredging station by getting three small bowls and a clean plate.
7. Place the flour in the first bowl, whisk the egg and water in the second, and fill the third with the panko bread crumbs.

8. Remove the marinated chicken from the fridge.
9. Taking a bit at a time, roughly a tablespoon’s worth, coat the chicken with flour, immerse it in the egg wash, and cover it with panko. Place the breaded chicken bite on the clean plate.
10. Repeat these steps for the remaining chicken.

11. Transfer all the chicken bites to the coated wire rack.

12. Bake for about 20 minutes, until the panko has turned golden brown.
13. Serve the chicken bites as is, or if you want more kick, serve it with sriracha hot sauce!
